INGRÉDIENTS
Fish
- 🐟 1 can (110g) mackerel in miso sauce
Vegetables
- 🍅 5 mini tomatoes
- 100g lotus root
- 1/3 stick (80g) burdock root
Condiments
- 2 tsp olive oil
- 💧 100cc water
- 🧂 Pinch of salt and pepper
- 2 tbsp ketchup
- Chopped parsley, as needed
ÉTAPES
Drain the mackerel can, reserving the liquid. Cut burdock root and lotus root into chunks and soak in water. Drain well.
Heat olive oil in a frying pan over medium heat. Add burdock root and stir-fry for 2–3 minutes. Add lotus root and mini tomatoes, stir-frying until coated with oil.
Add the reserved mackerel liquid and water. Cover with a lid and simmer on low heat for 15–20 minutes until burdock root softens.
Add mackerel, salt, pepper, and ketchup. Cook until the sauce thickens. Serve on a plate and garnish with parsley.
