INGRÉDIENTS
Main Ingredients
- 2 turnips with leaves (160g)
- 🦐 50g peeled shrimp
- 🧂 a pinch of salt
- 1/2 tbsp sake
Seasonings
- 💧 300cc water
- 1 tbsp mirin
- 🧂 1 tbsp soy sauce
- 1/2 tsp grated ginger
- 1/2 tsp Japanese dashi powder
Thickening Agent
- 1 tsp potato starch
- 💧 2 tsp water
ÉTAPES
Cut the turnips into two parts: the white root and the leaves. Peel the white part, cut it in half lengthwise, and then into wedges. Chop the leaves into 3cm pieces.
Place the peeled shrimp in a bowl, sprinkle with salt and sake, and mix well.
In a pot, combine the seasonings (marked with ☆) and the turnips. Heat over medium heat until it starts to simmer, then cover and cook on low heat for 6–7 minutes until the turnips are tender.
Add the shrimp and cook for about 3 minutes until they turn white. Then, add the turnip leaves and cook for another minute until wilted.
Pour in the potato starch mixture (water and starch) and stir until the sauce thickens.
