    • 🐙 150g boiled octopus

    • 1 piece sliced ginger
  • Seasoning

    • 1 tbsp sake
    • 1 tbsp mirin
    • 1.5 tbsp soy sauce

Soak the rice for 30 minutes to 1 hour and drain well.

Slice the ginger into thin strips.

Cut the boiled octopus into bite-sized pieces.

In a pot, combine sake, mirin, and soy sauce. Heat over medium heat until boiling. Add the octopus and mix. Once boiling, turn off the heat and let it cool for 30 minutes. Separate the octopus and the sauce. Adjust the sauce with water to make 360cc of liquid.

In another pot, add the rice and the adjusted sauce. Mix and flatten the rice. Place the octopus and ginger on top. Heat over medium-high heat until boiling, then cover and cook over low heat for 10-12 minutes. Increase the heat to medium-high for 30 seconds, then turn off the heat and let it steam for 10 minutes with the lid on.
