- 🍆 2 medium eggplants
- 🧅 1/4 onion, chopped
- 2 tbsp minced red bell pepper
- 2 tbsp minced yellow bell pepper
Sauces and Seasonings
- 3-4 tbsp spaghetti sauce
- 🧂 Pinch of salt
- Pinch of pepper
- Sprinkle of parsley
- Sprinkle of cheese powder
Cheese
- 🧀 2 tbsp pizza cheese
- 🧀 Extra pizza cheese for topping

- Drizzle of oil
ÉTAPES
Cut the eggplants in half and scoop out the insides.
Chop the onion finely and mince the eggplant insides.
Heat oil in a pan, sauté the onion, then add red and yellow bell peppers and minced eggplant insides.
Add 3-4 tbsp of spaghetti sauce to the pan and mix well. Turn off the heat and stir in 2 tbsp of pizza cheese.
Fill the scooped-out eggplants with the cooked mixture. Optionally, pre-bake the eggplants before filling.
Top the filled eggplants with extra pizza cheese and sprinkle parsley.
Bake in a preheated oven at 200°C (392°F) for 10-12 minutes.
Sprinkle cheese powder on the baked eggplant boat pizzas before serving.
