Meat
- 200g soy meat mince
- 200g ground chicken
Vegetables
- 🧅 60g minced green onion
- 5 minced shiso leaves
Cooking Oil
- 1 tbsp salad oil
Seasoning for Meat Mixture
- 1 tbsp sake
- 🧂 1/4 tsp salt
- A pinch of pepper
- 2 tbsp potato starch
- 🥚 1 egg white
Teriyaki Sauce
- 1 tbsp sake
- 2 tbsp mirin
- 🍬 1/2 tbsp sugar
- 2 tbsp soy sauce
Toppings
- 5 shredded shiso leaves
- 🥚 1 egg yolk
- A pinch of white sesame seeds
ÉTAPES
Mix soy meat, ground chicken, minced shiso, minced green onion, and the seasoning ingredients (sake, salt, pepper, potato starch, egg white) in a frying pan until sticky. Flatten into a round shape about 2cm thick.
Heat half of the salad oil in the pan over medium heat. Cook the tsukune for 4-5 minutes until browned. Flip and add the remaining oil. Cover and cook on low heat for 5 minutes until fully cooked.
Pour the prepared teriyaki sauce into the pan. Spoon the sauce over the tsukune while cooking on medium heat until glazed.
Plate the tsukune and garnish with shredded shiso, egg yolk, and white sesame seeds.
