INGRÉDIENTS
Seafood
- 🦪 200g clams (cleaned)
Vegetables
- 🥔 1 potato (100g), peeled and diced
- 🧅 1/4 onion (60g), diced
Dairy
- 🧈 20g salted butter
Seasoning
- 1 tbsp all-purpose flour
- 🧂 1/2 tsp salt
- Pinch of black pepper
- Dried parsley, as needed
Liquids
- 💧 200cc water
- 🥛 300cc soy milk
- 1 tbsp sake
ÉTAPES
Wash the clams thoroughly by rubbing the shells together.
Peel and dice the potato into 1cm cubes, then soak in water and drain.
Dice the onion into 1cm cubes.
Mix half the butter (10g) with the flour in a bowl.
Heat the remaining butter (10g) in a pot, add the potato and onion, and sauté over medium heat until the onion becomes translucent.
Add the clams, sake, and water to the pot. Bring to a boil, cover, and simmer on low heat for about 5 minutes until the clam shells open. Reserve one ladle of the broth.
Add the reserved broth to the roux, mix well, and return it to the pot. Stir in soy milk and heat gently. Season with salt and pepper.
