Noodles
- 🍜 150g somen noodles
Canned Goods
- 🐟 1 can oil-free tuna flakes
- 🌽 1/2 can sweet corn
Vegetables
- 🍆 80g eggplant, diced
- 🧅 Chopped green onion, to taste
Nuts
- 🥜 15g peanuts, crushed
Condiments
- Seaweed flakes, to taste
- Chili oil, to taste
Soy Milk Soup
- 🧂 1/3 tsp salt
- 1/2 tsp chicken stock powder
- 💧 100ml water
- 🥛 200ml unsweetened soy milk
Spicy Seasoning
- 🍬 1 tsp sugar
- 1 tbsp miso
- 1/2 tsp chili paste
- 🧄 1/2 tsp minced garlic
- 1/2 tsp cornstarch
ÉTAPES
Dice the eggplant into 1cm cubes, soak in water, and drain.
Mix the soy milk soup ingredients in a bowl and chill in the refrigerator.
Combine spicy seasoning ingredients in a bowl. Add tuna (with liquid), corn, and eggplant. Cover loosely with plastic wrap and microwave at 600W for 3 minutes. Stir well.
Boil somen noodles according to package instructions. Rinse under cold water and drain.
Plate the noodles, pour chilled soy milk soup over them, and top with spicy tuna mixture. Garnish with green onions, crushed peanuts, seaweed flakes, and chili oil.
