    • 200cc unsweetened soy milk
    • Chili oil, as needed
  • Meat Miso

    • 100g ground pork
    • 🧅 1/4 stalk green onion, chopped
    • 1/2 tsp doubanjiang (spicy bean paste)
    • 1 tbsp white sesame seeds
    • 1/2 tbsp miso paste
    • 1 tsp sesame oil
  • Soup Base

    • 1 tbsp sake
    • 💧 300cc water
    • 1 tbsp soy sauce
    • 🧂 1/3 tsp salt
    • 1/2 tsp chicken stock powder

Chop the green onion into 1cm pieces. Tear the lettuce into bite-sized pieces.

Heat sesame oil in a frying pan, add the remaining meat miso ingredients, and stir-fry over medium heat for about 3 minutes until the pork changes color.

In a pot, add the soup base ingredients and bring to a boil. Add the vermicelli and simmer over low heat for 5 minutes until softened.

Add the lettuce and soy milk to the pot, and gently heat over low heat without bringing to a boil.

Serve the soup in bowls, top with the meat miso, and drizzle chili oil as desired.
