- 🍗 1 piece (250g) chicken thigh
- 🥚 2 boiled eggs
Seasoning
- 1 slice ginger
- 2 tbsp soy sauce
- 2 tbsp mirin
- 🧂 1 tbsp sugar
Liquid
- 💧 200cc water
- 1 tbsp sake
ÉTAPES
Slice the ginger thinly.
Trim excess fat and tendons from the chicken thigh and cut it into bite-sized pieces.
In a pot, combine chicken, water, and sake. Heat over medium heat until boiling, then skim off any foam. Add ginger and the seasoning ingredients (soy sauce, mirin, sugar), then add the boiled eggs.
Cover the pot and simmer on low heat for about 15 minutes. Remove the lid and cook over medium-high heat, stirring occasionally, until the liquid reduces and thickens.
