Main Ingredients
- 🥩 230g beef brisket
- 180g soybean sprouts
- 1 slice radish (3x3cm)
- 🧅 1/2 green onion
Seasonings
- 11 cups anchovy stock
- 🧄 1 tbsp garlic
- 3 tbsp red pepper powder
- 1 tbsp soy sauce
- 🧂 1/2 tsp salt
- 1/2 tbsp sesame oil
- a pinch of black pepper
ÉTAPES
Slice radish into 0.3cm pieces and cut green onion diagonally.
Remove excess blood from beef brisket by pressing gently, avoiding washing to preserve flavor.
Heat sesame oil in a pot and stir-fry the beef brisket until no red color remains.
Add sliced radish and red pepper powder to the pot and lightly stir-fry.
Add soybean sprouts and garlic to the pot.
Pour anchovy stock into the pot and bring to a boil.
Skim off any foam and add soy sauce. Reduce heat to low and simmer until the stock reduces by 1 cup.
Add sliced green onion and adjust seasoning with salt.
Sprinkle black pepper and bring the soup to a final boil before turning off the heat.
