Vegetables
- 🥔 3 medium potatoes, diced
- 🥕 1 small carrot, diced
- 🧅 1/2 onion, diced
- 1 green chili, sliced
Seasonings
- 1 tbsp gochujang
- 2 tbsp chili powder
- 2 tbsp soy sauce
- 1 tbsp sugar
- 1 tbsp corn syrup
- 🧄 1/2 tbsp minced garlic
- 1/2 tbsp sesame oil
- 1 tbsp sesame seeds
- A pinch of black pepper
ÉTAPES
Dice the potatoes, carrots, and onions into bite-sized pieces. Ensure the potato slices are not too thick for faster cooking.
Mix all the seasonings together in a bowl: gochujang, chili powder, soy sauce, sugar, corn syrup, sesame oil, minced garlic, sesame seeds, and black pepper.
Heat a pan with a little cooking oil and stir-fry the diced vegetables. If you want to save time, microwave the potatoes for 1-2 minutes before stir-frying.
Once the potatoes are halfway cooked, add the seasoning mixture and 1/2 cup of water. Stir well to combine and let it simmer.
For extra spiciness, add sliced green chili. Skip this step if you prefer a milder flavor.
Continue simmering until the potatoes are fully cooked and the sauce thickens.
Serve the spicy and sweet gochujang potato stir-fry hot over rice.
