- 1/2 bitter melon (125g), sliced
Seasoning

- 1 tbsp vinegar
- 1/2 tbsp soy sauce
- 1/2 tbsp sesame oil
- 🌰 1 tsp white sesame seeds
- 1 tsp sliced chili

Cut the bitter melon in half lengthwise, remove seeds and pulp with a spoon, and slice thinly. Sprinkle with salt, rub gently, let sit for 5 minutes, and pat dry with kitchen paper.
