INGRÉDIENTS
Main Ingredients
- 🥚 3 eggs
- 1 tbsp mirin
- 2 shiitake mushrooms
- 🧅 2 stalks green onion
- 🧅 1 onion
- 100g glass noodles
- 1.5 tbsp chili powder
- 2 tbsp vegetable oil
- 2 tbsp soy sauce
- 1 tbsp fish sauce
- 🧄 1 tsp minced garlic
- A pinch of pepper
- 💧 1 liter water
ÉTAPES
Cut the green onions into 5cm pieces and slice the shiitake mushrooms thickly. Thinly slice the onion.
Soak the glass noodles in hot water for 30 minutes.
Beat the eggs with mirin in a bowl.
Heat vegetable oil in a pot and sauté the green onions and minced garlic.
Add chili powder and stir-fry for 1 minute.
Pour water into the pot and bring to a boil. Add the shiitake mushrooms and onion.
Season with soy sauce and fish sauce. Adjust the taste with additional salt or stock if needed.
Slowly pour the egg mixture into the boiling soup and let it cook.
Add the soaked glass noodles and simmer briefly until fully cooked.
