INGRÉDIENTS
Main Ingredients
- 30g vermicelli
- 120g sliced pork belly
- 5g dried wood ear mushroom
- 2 shiitake mushrooms
- 100g bean sprouts
- 1/2 stalk white part of green onion
Spices
- 2 chili peppers
- 1/2 tsp Sichuan pepper
Liquid
- 600cc water
- 1 tbsp cooking sake
Soup Seasoning
- 1 tsp grated garlic
- 1 tsp grated ginger
- 🧂 1/4 tsp salt
- 1 tbsp soy sauce
- 1/2 tsp chicken stock powder
- 1 tsp doubanjiang
- 1/3 tsp chili oil
Garnish
- 10g cilantro
ÉTAPES
Cut vermicelli into manageable lengths using kitchen scissors.
Soak dried wood ear mushrooms in water, trim hard parts, and cut in half. Slice shiitake caps thinly and tear stems. Slice green onion diagonally. Remove chili pepper seeds and stems. Cut cilantro into 3cm pieces.
Cut pork belly into 4cm wide pieces.
In a pot, add water, cooking sake, and pork belly. Heat over medium, skim off foam, then add soup seasonings, chili peppers, and Sichuan pepper. Mix well.
Add vermicelli, shiitake, bean sprouts, green onion, and wood ear mushrooms. Cover and simmer on low heat for 7-8 minutes.
Serve in bowls and garnish with cilantro.
