Meat
- 🐖 100g thinly sliced pork belly
Vegetables
- 🍄 1 pack enoki mushrooms
- 🧅 Chopped green onion, as needed
Condiments
- 60g kimchi
- 1 tbsp sesame oil
- 🧂 1 tbsp soy sauce
- 🍬 1 tsp sugar
- 🧂 2 tsp miso
Liquids
- 💧 150ml water
- 🍶 1 tbsp sake
- 🥛 200ml unsweetened soy milk
ÉTAPES
Trim the root of the enoki mushrooms, divide them in half, and separate into bite-sized pieces. Cut the pork belly into bite-sized pieces.
Heat sesame oil in a pot over medium heat. Add the pork belly and stir-fry until the color changes. Add water and sake, bring to a boil, cover, and simmer on low heat for about 5 minutes.
Add enoki mushrooms and stir. Cook until the mushrooms are tender. Add kimchi, soy sauce, sugar, and miso, stirring to combine. Pour in soy milk and warm gently over low heat without boiling.
Serve in bowls and garnish with chopped green onions.
