Noodles
- 🍜 1 frozen udon noodle pack
Vegetables
- 🥬 1/2 bag bok choy
- 🧅 1/3 stalk green onion
Meat
- 🍗 150g chicken thigh
Seasonings
- 🧄 1/2 tsp grated garlic
- 1/2 tsp doubanjiang (chili bean paste)
- 🥛 150ml unsweetened soy milk
- 2 tsp salad oil
Sauces
- 3 tbsp mentsuyu (3x concentrated)
- 1/2 tsp chicken broth powder
- 💧 200ml water
ÉTAPES
Cut the bok choy into bite-sized pieces. Slice the green onion thinly on a diagonal. Cut the chicken into bite-sized pieces.
Heat salad oil in a pot over medium heat. Add the chicken and grated garlic, and stir-fry until the chicken changes color. Add the doubanjiang and stir until well combined.
Add the bok choy and green onion to the pot and stir-fry until softened.
Add the mentsuyu, chicken broth powder, and water. Bring to a boil, cover, and simmer on low heat for 3 minutes.
Add the frozen udon noodles and soy milk to the pot. Cook until the noodles are heated through.
