- 800g pork spare ribs

- 100g dried chickpeas

- 🧅 1/2 onion, sliced (200g)
- 🧄 1 clove garlic, minced
Seasoning
- 🧂 Salt and pepper, to taste
- 1 tbsp olive oil
- 1 bay leaf
- 1 tsp chili powder
- Pinch of black pepper
- Chopped parsley, to garnish
Sauce
- 💧 300ml water
- 🍅 1 can (400g) diced tomatoes
- 🍬 1 tsp sugar
- 3 tbsp ketchup
- 🧂 2/3 tsp salt
ÉTAPES
Slice the onion thinly and mince the garlic after removing its core.
Pat the spare ribs dry with paper towels, season with salt and pepper, and let sit for 10 minutes.
Heat olive oil in a pot, add the spare ribs, and sear on medium heat until browned on both sides.
Add onion and garlic to the pot and sauté until they absorb the oil.
Add chickpeas, water, diced tomatoes, sugar, ketchup, and bay leaf. Cover and simmer on low heat for 20–30 minutes.
Add chili powder and black pepper, mix well, and adjust seasoning if needed.
Serve on a plate and garnish with chopped parsley.
