Trim the spinach roots and cut a cross at the base. Wash the leaves and roots thoroughly in a bowl of water. Cut into 4cm pieces. Slice the onion thinly.

Cut the bacon into 1cm wide strips.

In a pot, bring 100ml of water to a boil. Add spinach, cover, and steam over medium heat for 1 minute. Remove the lid and cook until wilted. Drain, rinse with cold water, and squeeze out excess water.

Wipe the pot dry. Add butter and heat over medium heat. Sauté bacon and onion until the onion becomes translucent. Sprinkle in flour and cook until no raw flour remains.
