- 🥬 1/2 bunch spinach
- 🥔 5 medium potatoes
- 🍅 Some mini tomatoes
- Some parsley
Meat
- 🥓 2 slices bacon
Dairy
- 🧈 10g salted butter
Seasoning
- 🧂 A pinch of salt and pepper
Batter
- 🥚 1 egg
- 3 tbsp all-purpose flour
- 💧 2 tbsp water
Coating
- Some breadcrumbs

- Some salad oil
ÉTAPES
Cut spinach into 1cm pieces.
Peel and cut potatoes into bite-sized pieces, soak in water, then drain. Cut bacon into 5mm strips.
Mix egg, flour, and water in a bowl to make the batter.
Place spinach, bacon, and butter in a microwave-safe container, cover loosely with plastic wrap, and microwave at 600W for 2 minutes.
Place potatoes in a microwave-safe container, cover loosely with plastic wrap, and microwave at 600W for 7 minutes until soft. Let cool slightly.
Mash potatoes, mix with spinach mixture and salt and pepper, divide into 6 portions, and shape into balls.
Dip each ball into the batter, then coat with breadcrumbs.
Heat salad oil to 180°C in a pot, fry croquettes until golden brown, turning occasionally.
