INGRÉDIENTS
Fish
- 🐟 2 fillets of fresh salmon (about 160g)
Vegetables
- 🥬 1/2 bunch spinach (about 150g)
- broccoli 1/2 head cauliflower (about 150g)
Dairy
- 🥛 1 1/2 cups soy milk
- 🧀 2 tbsp grated cheese
Seasoning
- 🍷 1 tbsp white wine
- 🧂 1/3 tsp salt
- A pinch of black pepper
Other
- 1 tbsp olive oil
- 🌾 2 tbsp all-purpose flour
ÉTAPES
Preheat the oven to 180°C (356°F).
Season the salmon fillets with salt and pepper. Heat olive oil in a pan and lightly sear the salmon on both sides. Set aside.
Blanch the spinach and cauliflower in boiling water for 1-2 minutes, then drain and set aside.
In a saucepan, heat olive oil and stir in the flour. Gradually add soy milk, stirring constantly to create a smooth sauce.
Add white wine, grated cheese, salt, and pepper to the sauce. Mix well and simmer for 2-3 minutes.
In a baking dish, layer the blanched vegetables and seared salmon. Pour the sauce evenly over the top.
Bake in the preheated oven for 20-25 minutes, or until the top is golden and bubbly.
