Trim the spinach roots slightly, make cross cuts, and rinse in water.

Mix the seasoning ingredients in a microwave-safe container and heat uncovered at 600W for about 30 seconds. Let it cool.

Boil water in a pot, add spinach starting from the roots, and blanch for about 30 seconds until tender. Transfer to cold water.

Squeeze out excess water from the spinach, cut into 4cm pieces, and squeeze again. Mix with the cooled seasoning and shirasu, then let sit for 5 minutes.
