- 🥬 3-4 stalks spinach
- 🧅 1/4 onion, sliced
- 🍄 1 king oyster mushroom, sliced
- 🍅 3 cherry tomatoes, sliced
Protein
- 🌭 4 Vienna sausages, sliced
- 🥚 3 eggs
Dairy
- 🥛 1/2 cup milk
Seasoning
- 🧂 3 pinches salt
- To taste ground pepper
- 2.5 tbsp olive oil
ÉTAPES
Wash spinach thoroughly and cut into 2-3 pieces.
Slice onion and king oyster mushroom thinly.
Slice Vienna sausages and cherry tomatoes.
Heat olive oil in a pan and sauté onion, mushroom, and sausages over high heat.
Add spinach to the pan and season with salt and pepper. Cook until spinach is slightly wilted.
Beat eggs with 2 pinches of salt and mix in milk.
Grease an oven-safe dish with olive oil, spreading it evenly on the walls.
Spread sautéed vegetables evenly in the dish.
Pour egg mixture over the vegetables and top with sliced cherry tomatoes.
Bake in a preheated oven at 180°C (356°F) for 20-30 minutes until golden brown.
