- 🥬 4 handfuls spinach
- 🍅 6 tbsp tomato sauce
- 🥚 6 eggs
- 3 tbsp olive oil
- 🧀 1 cup mozzarella cheese
- 🧂 A pinch of salt
- A pinch of black pepper
ÉTAPES
Heat olive oil in a frying pan over medium heat.
Add spinach to the pan, sprinkle with salt and black pepper, and stir gently until wilted.
Add tomato sauce to the spinach and stir to combine.
Beat the eggs in a bowl and pour them over the spinach mixture in the pan.
Sprinkle mozzarella cheese on top, cover the pan, and cook on medium heat for 5-6 minutes.
Alternatively, preheat the oven to 425°F, transfer the pan to the oven, and bake for 5 minutes. Add cheese and bake for another 5 minutes until golden.
