- 50ml mirin

ÉTAPES
Wash the squid under water and pat dry. Cut into bite-sized pieces.
Mix sake lees, mirin, and salt in a tray until well combined.
Add the squid to the mixture, coat thoroughly, and cover with cling wrap. Refrigerate for 3 days to allow flavors to develop.
Remove the squid from the marinade, rinse under water, and pat dry. Place on a baking tray lined with aluminum foil.
Bake in a toaster oven for 5–7 minutes until golden brown and cooked through.
Plate the squid and garnish with a wedge of lemon.
