Seasoning
- 💧 1.5 cups water
- 🧂 1/2 cup soy sauce
- 1/3 cup oligosaccharide
- A pinch of ground pepper
- 🧅 1/4 onion
- 2 green chilies
- 🧄 5 cloves garlic
- 2-3 pieces kelp
ÉTAPES
Clean and prepare the squid. Make shallow cuts on the inside surface.
Blanch the squid briefly in boiling water, then cut into bite-sized pieces.
In a pot, combine 1.5 cups water, 1/2 cup soy sauce, 1/4 onion, 5 garlic cloves, 2 green chilies, and 2-3 pieces of kelp. Simmer for 10-20 minutes to create a flavorful broth.
Strain out the vegetables and kelp, then add 1/3 cup oligosaccharide to the broth.
Add the blanched squid pieces to the pot.
Simmer on low heat for 20 minutes until the squid is tender and the sauce is reduced.
