Egg
- 🥚 2 beaten eggs
Vegetables
- 1 bag bean sprouts
- 1 pack shimeji mushrooms
- Chopped green onion, as needed
Seasoning
- 1 tbsp salad oil
- 1 tbsp concentrated soy sauce (3x)
- A pinch of pepper
ÉTAPES
Trim the root of the shimeji mushrooms and separate them.
Heat half of the salad oil (1/2 tbsp) in a frying pan over medium heat, pour in the beaten eggs, and stir gently until semi-cooked. Remove the eggs from the pan.
Add the remaining salad oil (1/2 tbsp) to the pan and heat. Stir-fry the shimeji mushrooms over medium heat until softened. Add the bean sprouts and stir-fry for about 1 minute. Add soy sauce and pepper, and stir quickly.
Return the eggs to the pan and gently break them apart while mixing with the vegetables. Serve on a plate and sprinkle chopped green onions on top.
