Remove the innards and tentacles from the squid body. Remove the cartilage from the body. Separate the tentacles from the innards and remove the mouth and tips of the tentacles. Wash the body and tentacles thoroughly.

Cut the squid body into 1cm wide rings. Divide the tentacles into pairs and coat them with cornstarch.

Heat sesame oil in a frying pan over medium heat. Stir-fry the squid until its color changes. Add bean sprouts and stir-fry until softened. Add kimchi and soy sauce, then stir-fry for 1 minute. Serve on a plate and garnish with chopped green onion.
