- 🍆 1 eggplant
- 1/2 yellow bell pepper
- 🧅 1/2 onion, minced
- 🧄 1 clove garlic, minced
Dry Ingredients
- 1 tbsp flour
- 4 tbsp breadcrumbs
Oil & Seasoning
- 1.5 tbsp olive oil
- Pinch of salt and pepper
Meat Filling
- 120g ground meat
- 🥚 1/2 beaten egg
Tomato Sauce
- 🍅 400g canned tomatoes
- 1.5 tbsp ketchup
- 1 tsp bouillon granules
- 1 tsp sugar
- 🧂 1/4 tsp salt
- Pinch of pepper
Toppings
- Minced parsley, as needed
- Grated cheese, as needed
ÉTAPES
Cut the eggplant in half lengthwise and scoop out the flesh to create a cavity for stuffing.
Prepare the meat filling by mixing ground meat, beaten egg, breadcrumbs, and a pinch of salt and pepper.
Stuff the eggplant halves with the meat mixture and lightly coat the surface with flour.
Heat olive oil in a pan and sauté the minced onion, garlic, and yellow bell pepper until softened.
Add the stuffed eggplants to the pan and lightly brown them on all sides.
Pour in the canned tomatoes, ketchup, bouillon granules, sugar, salt, and pepper. Stir to combine.
Cover and simmer for 20 minutes, occasionally spooning the sauce over the eggplants.
Serve the stuffed eggplants topped with minced parsley and grated cheese.
