- 60g boiled chickpeas
- 30g quinoa
- 1 handful baby greens
- 1 handful kidney beans
- 🧀 30g feta cheese
- 🍅 50g tomato
Dressing Ingredients
- 🧅 15g red onion
- 1.5 tbsp olive oil
- 1/2 tsp balsamic vinegar
- 🍋 1 tsp lemon juice
ÉTAPES
Soak chickpeas overnight to prepare them for cooking.
Cook quinoa with three times the amount of water for 15 minutes until fluffy.
Mix all dressing ingredients in a small bowl until well combined.
Arrange salad ingredients on a plate, including chickpeas, quinoa, baby greens, kidney beans, tomato, and feta cheese.
Crumble feta cheese by hand and sprinkle over the salad.
Drizzle the dressing over the salad just before serving.
