INGRÉDIENTS
Rice
- 🍚 2 bowls of cooked rice (400g)
Meat
- 🐖 300g pork belly block
Vegetables
- 🧅 10cm green onion, thinly sliced
Oil
- 1/2 tbsp salad oil
Condiments
- Mustard, as needed
- Pickled ginger, as needed
Seasoning
- 2 tbsp sake
- 2 tbsp mirin
- 🍬 1 tbsp sugar
- 🧂 3 tbsp soy sauce
- 1 tsp grated ginger
- 💧 300ml water
Thickener
- 1 tsp potato starch
- 💧 1 tbsp water
ÉTAPES
Cut the pork belly into 1cm cubes. Slice the green onion thinly and soak in water for 10 minutes, then drain.
Heat salad oil in a frying pan over medium heat. Add the pork and cook until browned. Remove excess fat with a paper towel.
Add all seasoning ingredients (sake, mirin, sugar, soy sauce, grated ginger, water) to the pan and mix. Bring to a boil and skim off any scum.
Cover with a drop lid and a regular lid. Simmer on low heat for 10 minutes. Remove the lids and increase to medium heat, reducing the sauce to one-third. Add the potato starch mixture and stir until thickened.
Serve rice in a bowl, top with green onion, braised pork, mustard, and pickled ginger.
