Slice daikon into 1.5cm-wide half-moon pieces and trim edges.

Heat salad oil in a pot over medium heat, add pork, and sear until browned on both sides. Remove excess oil with paper towels, then add green onion, ginger, and water. Bring to a boil, skim off foam, and simmer on low heat for 10 minutes. Remove green onion.

Add daikon, sake, mirin, and sugar. Cover with a silicone lid and simmer on low heat for 10 minutes until daikon softens.

Add soy sauce, cover with the silicone lid, and simmer on low heat for another 10 minutes. Turn off heat, add soft-boiled eggs, and let sit for 10 minutes, turning eggs occasionally.
