INGRÉDIENTS
Mushroom
- 🍄 6 dried shiitake mushrooms
Seasoning
- 2 tbsp sake
- 2 tbsp mirin
- 🍬 2 tbsp sugar
- 2 tbsp soy sauce
- 1/2 tsp dashi powder
- 200 ml shiitake soaking liquid
ÉTAPES
Rinse the dried shiitake mushrooms lightly with water and squeeze out excess moisture. Place them in a bowl and soak in plenty of water for about 5 hours. Reserve 200 ml of the soaking liquid and slice the mushrooms thinly after removing the stems.
Add the sliced shiitake mushrooms and all seasoning ingredients into a pot. Heat over medium heat until boiling, then reduce to low heat, cover with a drop lid, and simmer for 15 minutes. Let cool completely.
