Main Ingredients
- 🍗 250g chicken thigh
- 🥚 3 soft-boiled eggs
- 🍆 240g eggplant
Cooking Oil
- 2 tbsp salad oil
Seasonings
- 1 tbsp sake
- 1 tbsp mirin
- 🍬 1 tbsp sugar
- 2 tbsp vinegar
- 1 tbsp soy sauce
- 2 slices ginger
- 💧 100ml water
ÉTAPES
Cut the eggplant in half lengthwise, score the skin, and cut into halves.
Cut the chicken into bite-sized pieces.
Heat 1 tbsp of salad oil in a pan, place the eggplant skin-side up, and cook until browned. Flip, add the remaining oil, and cook until softened. Remove from pan.
In the same pan, place chicken skin-side down and cook over medium heat until browned. Flip, cover, and steam for 4 minutes over low heat. Add seasonings and bring to a boil. Cover and simmer for 5 minutes, then add eggplant and simmer for 2 more minutes.
Turn off the heat, move ingredients to the side, and add soft-boiled eggs. Let sit for 10 minutes, flipping the eggs halfway through.
