INGRÉDIENTS
Fish
- 🐟 2 fillets mackerel
Vegetables
- 1/2 bag bean sprouts
- 🥕 1/3 carrot, julienned
- 1/3 bunch chives, cut into 3cm pieces
Coating
- Potato starch, as needed
Oil
- 1 tsp salad oil (for mackerel)
- 1 tsp salad oil (for sauce)
Seasoning
- 1 tsp grated ginger
- 1 tbsp sake
- 1 tsp soy sauce
Sweet and Sour Sauce
- 1 tbsp sake
- 1 tbsp mirin
- 🍬 1 tsp sugar
- 1 tbsp vinegar
- 2 tbsp soy sauce
- A pinch of dashi powder
- 💧 200ml water
Thickener
- 1 tbsp potato starch
- 💧 1 tbsp water
ÉTAPES
Julienne the carrot and cut the chives into 3cm pieces.
Remove bones from the mackerel and cut into bite-sized pieces.
Mix the ginger, sake, and soy sauce in a bowl, then marinate the mackerel for 5 minutes.
Pat the mackerel dry and coat with potato starch.
Heat salad oil in a pan over medium heat and fry the mackerel until golden brown on both sides.
Wipe the pan clean, add salad oil, and stir-fry the bean sprouts and carrot for 2–3 minutes.
Add the sweet and sour sauce ingredients to the pan and bring to a boil. Add chives and thicken with the potato starch mixture.
Serve the fried mackerel on a plate and pour the sauce over it.
