INGRÉDIENTS
Main
- 🍗 8 chicken wings (480g)
- 🧂 Pinch of salt and pepper
- 3 tbsp potato starch
- Enough vegetable oil for frying
Sauce
- 1 tbsp mirin
- 🍬 1 tsp sugar
- 1.5 tbsp soy sauce
- 1/2 tsp white sesame seeds
ÉTAPES
Make two cuts along the bone of each chicken wing. Place them in a bowl, season with salt and pepper, and coat evenly with potato starch.
Heat vegetable oil in a frying pan to 160°C, about 1cm deep. Fry the wings skin-side down for 4 minutes until the coating sets and turns golden. Flip and fry for another 3–4 minutes until cooked through. Remove from the pan.
Discard the oil from the pan and wipe clean. Add all sauce ingredients except sesame seeds and bring to a boil over medium heat. Stir until thickened. Turn off the heat, add sesame seeds and fried wings, and coat evenly.
