INGRÉDIENTS
Protein
- 🍗 250g chicken thigh
Vegetables
- 200g lotus root
- 1 pack shimeji mushrooms
- Chopped green onion, as needed
Seasoning
- 1 tbsp potato starch
- 1/2 tbsp salad oil
- 1 tbsp sake
- 2 tbsp mirin
- 1 tbsp soy sauce
- 1/3 tsp dashi powder
ÉTAPES
Peel the lotus root, cut it in half lengthwise, then slice into 5mm thick pieces. Soak in water and drain. Separate the shimeji mushrooms into bite-sized pieces.
Cut the chicken into bite-sized pieces and coat with potato starch.
Heat salad oil in a frying pan over medium heat. Add the chicken and stir-fry until the color changes. Add the lotus root and stir-fry until translucent.
Add the shimeji mushrooms and stir-fry until softened. Add the seasoning ingredients and stir to combine.
Serve on a plate and sprinkle with chopped green onion.
