INGRÉDIENTS
Fish
- 🐟 200g sashimi-grade tuna
Vegetables
- 1/4 pack broccoli sprouts
Seasoning
- 🧂 Pinch of salt and pepper
Starch
- 2 tbsp potato starch
Oil
- 1 tbsp salad oil
Sauce
- 1 tbsp sake
- 1 tbsp mirin
- 🍬 1/2 tbsp sugar
- 🧂 1 tbsp soy sauce
- 1/2 tsp grated ginger
ÉTAPES
Trim the roots off the broccoli sprouts.
Cut the tuna into 1.5cm slices at an angle. Season with salt and pepper, then coat with potato starch.
Heat salad oil in a pan over medium heat. Cook the tuna slices for about 1 minute on each side until lightly browned. Remove from the pan.
Wipe the pan clean with a paper towel. Add the sauce ingredients and heat over medium until bubbling. Return the tuna to the pan and coat evenly while reducing the sauce.
Plate the tuna and garnish with broccoli sprouts.
