Pie Crust
- 1 (9 inch) unbaked pie crust
Filling
- 🍠 2 cups cooked and mashed sweet potatoes
- 🧈 2 tablespoons butter, softened
- 🥚 2 eggs, beaten
- 🧂 1 cup white sugar
- 1 tablespoon all-purpose flour
- 🧂 1/2 teaspoon salt
- 🥛 1/2 cup buttermilk
- 1/4 teaspoon baking soda
- 1 teaspoon vanilla extract
ÉTAPES
Preheat oven to 350 degrees F (175 degrees C).
Mix together mashed sweet potatoes, softened butter, and beaten eggs. In a separate bowl, mix sugar, flour, salt, and optional spices, then add to the sweet potato mixture and stir well.
Mix buttermilk and baking soda together, then add to the sweet potato mixture. Stir in vanilla extract and mix well. Pour the filling into the pie crust.
Bake in the preheated oven for 70 minutes or until the center is set.
