ÉTAPES
Cut the swordfish fillets into halves and sprinkle with salt. Let sit for 5 minutes, then pat dry with kitchen paper.
Season both sides of the fillets with pepper. Coat them in all-purpose flour, followed by egg white, and then cover with almond slices.
Heat vegetable oil in a pot to 170°C (340°F). Fry the coated fillets until golden brown.
