Fish
- 🐟 2 fillets swordfish
Vegetables
- 6 shiso leaves
- 🍋 1 lemon, cut into wedges
Condiments
- 2 pickled plums
- 1 tbsp mayonnaise
- 🧂 Salt and pepper to taste
Cooking Oil
- Oil for frying
Batter
- Flour as needed
- 🥚 1 beaten egg
- Breadcrumbs as needed
ÉTAPES
Cut the swordfish into thirds and season with salt and pepper. Let sit for 5 minutes, then pat dry.
Remove the pits from the pickled plums and chop finely.
Mix the chopped plums with mayonnaise in a bowl to create the plum-mayo sauce.
Spread the plum-mayo sauce evenly on the swordfish pieces, then wrap each piece with a shiso leaf. Coat with flour, dip in beaten egg, and cover with breadcrumbs.
Heat oil in a frying pan to 170°C (340°F). Fry the coated swordfish pieces until golden brown, turning occasionally. Serve with lemon wedges.
