- 2 tbsp mirin
- 🍬 1 tbsp sugar
- 2 tbsp soy sauce
- 💧 150 ml water
ÉTAPES
Sprinkle salt on the red snapper head and let it sit for 10 minutes. Boil water in a pot, blanch the fish briefly, and transfer to cold water to remove scales and impurities.
Thinly slice the ginger.
In a pot, combine ginger and all seasoning ingredients (sake, mirin, sugar, soy sauce, and water). Bring to a boil, add the fish head, and once boiling, cover with a drop lid. Simmer on low heat for 15 minutes.
