    • 1/2 bag bean sprouts
    • 1 tbsp salad oil
    • Chopped green onion, to taste
  • Ankake Sauce

    • 💧 150 ml water
    • 1/3 tsp Japanese dashi powder
    • 🍬 1 tbsp sugar
    • 1.5 tbsp soy sauce
    • 1 tbsp sake
  • Thickening Agent

    • 1 tbsp potato starch
    • 💧 2 tbsp water

Cut the thick fried tofu into bite-sized pieces. Trim the root of the shimeji mushrooms and separate them by hand. Slice the onion thinly.

Place the tofu in a frying pan over medium heat and cook until both sides are browned. Remove and set aside on a plate.

Add salad oil to the same pan and heat. Stir-fry the onion and shimeji mushrooms until the onion softens. Add the bean sprouts and stir briefly.

Add the ankake sauce ingredients to the pan and bring to a boil.

Once boiling, add the water-starch mixture to thicken the sauce. Pour the sauce over the tofu and serve.
