INGRÉDIENTS
Vegetable
- 1/2 pack pea shoots
- 🧅 1/4 onion, thinly sliced
Protein
- 🥚 1 egg, beaten
- 1/2 sheet fried tofu, sliced
Seasoning
- 100cc water
- A pinch of dashi powder
- 1 tbsp mirin
- 🍬 1 tsp sugar
- 1 tbsp soy sauce
ÉTAPES
Cut the pea shoots in half, slice the fried tofu into 1cm strips, and thinly slice the onion. Beat the egg in a bowl.
In a small pot, combine water, dashi powder, mirin, sugar, and soy sauce. Bring to a boil, then add the onion and fried tofu. Simmer over medium-low heat until the onion softens.
Add the pea shoots and stir briefly. Pour the beaten egg over the mixture and cook until the egg is semi-set.
