INGRÉDIENTS
Main
- 300g firm tofu
- 1 slice bacon
- 100g enoki mushrooms
- 50g shimeji mushrooms
Coating
- sufficient amount of all-purpose flour
Cooking Oil
- 2 tbsp salad oil
Sauce
- 10g salted butter
- 100ml water
- sufficient amount of chopped green onion
- 1 tbsp sake
- 2 tbsp mirin
- 3 tbsp soy sauce
- 1 tbsp sugar
Thickener
- 1 tsp potato starch
- 2 tsp water
ÉTAPES
Remove the base of the shimeji mushrooms and separate them. Cut off the root of the enoki mushrooms and separate them.
Cut the bacon into thin strips.
Wrap the tofu in kitchen paper and microwave at 600W for 2 minutes. Cut into 4 pieces and coat with all-purpose flour.
Heat salad oil in a frying pan, add the tofu, and fry until both sides are golden brown. Remove from the pan.
In the same pan, heat butter and sauté the bacon over medium heat until crispy. Add shimeji mushrooms, enoki mushrooms, water, and the sauce ingredients (sake, mirin, soy sauce, sugar). Bring to a boil and cook until the mushrooms are tender. Thicken with potato starch dissolved in water.
Plate the tofu, pour the mushroom sauce over it, and garnish with chopped green onions.
