- 2 slices bacon
Legumes
- 150g mixed beans
Vegetables
- 🧅 1/2 onion, sliced
Oil
- 1 tbsp olive oil
Herbs
- Chopped parsley, a pinch
Soup Base
- 🧂 1/3 tsp salt
- A pinch of pepper
- 1/3 tsp consomme
- 🍅 200cc unsalted tomato juice
- 💧 200cc water
ÉTAPES
Slice the onion thinly.
Cut the bacon into 7mm strips.
Heat olive oil in a pot over medium heat, add bacon and onion, and sauté until the onion softens.
Add mixed beans and all soup base ingredients, stir, and bring to a boil. Cover and simmer on low heat for about 2 minutes.
Serve in bowls and garnish with chopped parsley.
