Cut the potatoes into small bite-sized pieces and soak them in water. Drain the water and place the potatoes in a microwave-safe container. Cover loosely with plastic wrap and microwave at 600W for 7 minutes until soft. Mash the potatoes until smooth while still hot. Add the seasonings and mix well. Divide into 6 portions.

Cut the cheese pieces in half horizontally.

Take one portion of the potato mixture, flatten it, and place a piece of cheese in the center. Wrap the potato mixture around the cheese and shape it into a triangle. Repeat for all 6 portions. Use a straw or similar tool to create circular patterns on the surface.

Heat salad oil in a frying pan over medium heat. Add the potato mochi and pan-fry, flipping occasionally, until lightly browned on both sides.
