- 🐟 200g tuna loin
Condiments
- 1 tbsp Dijon mustard
- 🌰 1.5 tbsp sesame powder
- 1 pinch coarse pepper
Vegetables
- 🥒 1/2 cucumber
- 🍅 5 cherry tomatoes
- 🧅 1/4 onion
- 🍋 1/4 lemon
Marinade
- 🧂 2 pinches salt
- 1 pinch coarse pepper
- 2 tsp olive oil
Sauce
- 4 tbsp soy sauce
- 4 tbsp rice vinegar
- 🍬 4 tbsp sugar
- 1 handful bonito flakes
- 🍋 1/4 lemon
ÉTAPES
Prepare tuna loin steak cuts, preferably thick pieces.
Soak tuna in salted water for 5 minutes, rinse, and pat dry. Apply Dijon mustard evenly.
Coat tuna with sesame powder evenly. It's okay if some areas are over or under-coated.
Mix sauce ingredients until sugar dissolves. Squeeze lemon juice into the mixture and add bonito flakes last.
Heat oil in a pan on high heat and sear tuna for 15-20 seconds on each side. Rest for 2-3 minutes.
Slice cucumber, onion, and cherry tomatoes. Adjust vegetables to your preference.
Strain the sauce to remove solids. Substitute bonito flakes with dashi powder or MSG if unavailable.
Slice tuna to desired thickness, plate with vegetables, and drizzle sauce generously.
