INGRÉDIENTS
Fish
- 🐟 200g cod fillets
Vegetables
- 🥕 75g carrot, julienned
- 🍄 100g enoki mushrooms
- 🧅 3 stalks green onion, chopped
Seasoning
- 🧂 1 pinch salt
- as needed all-purpose flour
- 1 tbsp salad oil
Vegetable Sauce
- 💧 200ml water
- 1 tsp Japanese dashi granules
- 🧂 1 tsp soy sauce
- 1 tsp mirin
- 🧂 1 pinch salt
Thickening Agent
- 1 tsp cornstarch
- 💧 1 tsp water
ÉTAPES
Julienne the carrot and chop the green onions into 3cm pieces.
Cut the cod fillets into 3-4 pieces and season with a pinch of salt. Lightly coat with all-purpose flour.
Heat salad oil in a frying pan over medium heat. Cook the cod until both sides are golden and fully cooked. Remove and set aside on a serving plate.
Wipe the pan clean with a paper towel. Add the water, dashi granules, soy sauce, mirin, and salt. Bring to a boil over medium heat.
Add enoki mushrooms and julienned carrots to the boiling sauce. Cook for about 3 minutes until softened.
Mix cornstarch with water to create a slurry. Gradually add to the sauce while stirring until thickened. Add green onions and cook briefly.
Pour the vegetable sauce over the cooked cod and serve immediately.
