- 2 chikuwa
- 4 stalks wakagi
- 🧂 1 tsp soy sauce
Seasonings
- 🍬 2 tsp sugar
- 2 tbsp white miso
- 1/2 tsp mustard paste
ÉTAPES
Slice the chikuwa diagonally into 7–8mm thick pieces.
Boil water in a pot, add salt (not listed in ingredients), and blanch the wakagi starting with the stems. Once softened, add the green parts and boil briefly on high heat. Drain the water.
Cut the wakagi in half, sprinkle with soy sauce, squeeze gently from the root end (soy sauce rinse), and cut into 3–4cm pieces.
In a separate bowl, mix the seasonings (sugar, white miso, mustard paste). Add the wakagi and chikuwa, and toss to combine.
