    • 1/2 tbsp mirin

    • 1/4 tsp dashi powder
  • Garnish

    • 🧅 Chopped green onion as needed

Break maitake mushrooms into small pieces by hand. Julienne the ginger.

Pat the yellowtail dry with a paper towel and cut into 1.5cm cubes. Mix the yellowtail with the seasoning ingredients (sake and soy sauce) in a bowl and let it marinate for 5 minutes. Drain excess liquid.

Add soaked rice, rice seasoning ingredients (sake, mirin, soy sauce, dashi powder), and water to the rice cooker. Mix well and level the rice. Place ginger, yellowtail, and maitake mushrooms on top. Cook using the regular rice setting.

Once cooked, add yuzu pepper and gently mix the rice. Serve in bowls and garnish with chopped green onion.
